Truffles are notoriously known for their decadence. Turn up your truffle game with these guilt-free nuggets of goodness. These "treats" are chock-full of nutrients which include protein, vitamin E, and magnesium from the almond butter, fiber, potassium, and B-6 from the dates. So, this holiday, give the gift of health! Wrap these balls up in tinsel and twine and toss them at your loved ones.
Not So Naughty Truffles
- 1/4 cup + 12 hazelnuts, toasted and skinned
- 10 juicy and plump Medjool dates, halved and pitted
- 1/2 tsp vanilla extract
- 1/4 cup almond butter
- 1 tsp ground cinnamon
- 1/4 cup raw unsweetened cacao powder
In a food processor, add 1/4 cup of hazelnuts and lightly pulse until chopped. Transfer to a plate. Place the dates and vanilla extract in the food processor and mix until a chunky paste is formed. Add the nut butter and pulse until mixed. Add the cinnamon and cacao and pulse a few more times until the mixture is sticky and a tad crumbly.
Using your hands, roll the date mixture into tablespoon sized balls. Stud each ball with a roasted hazelnut. Roll each truffle in chopped hazelnuts, pressing down slightly to allow ground nuts to stick. Place truffles on a plate and refrigerate for at least an hour. Truffles can keep for a few weeks covered in the fridge.
