Cauliflower is certainly having it's moment, whether it is riced, roasted, or put into a smoothie, it seems to be omnipresent. Cauliflower is typically on our plates once a week, and Jack is already a fan. What makes cauliflower one of my "go-to" vegetables is its versatility, adaptability, and quick cooking time. It is also a member of the brassica family, which means it contains fiber and cancer-fighting nutrients. Whole roasted cauliflower may seem intimidating, but it is quite simple to make and it is certainly a show stopper. If you are looking to impress your vegan or non-vegan friends, here is a dish for you!

Bolognese or meat sauce, as we used to call it in my household growing up, was a Sunday night staple. My mom would always make it with ground lean turkey, jarred sauce, and it would always be better the next day. Thus the reason why this dish is my comfort food. In my continual effort to think with a more plant-forward focus, I swapped the turkey for lentils, made my own sauce, and added meaty mushrooms and tons of fresh and dried herbs and spices to create a flavorful and comforting meal.

The start of the New Year welcomes the opportunity to reevaluate your diet and lifestyle and make modifications that allow you to feel your best. Motivation is usually extremely high in January, but by the time February comes around, the momentum surrounding change has drastically decreased. Severe resolutions and extremes are not my thing, and I believe that they lead to a cycle of restrictions and binges which result in regret and yo-yo weight changes. My belief has always been to make small, mindful tweaks that stay with you indefinitely. Whether your tweak is to go meatless for three meals a week, try a new workout once a month, or indulge in more self-care, these changes result in a healthier, happier you.

When I was in the Chef's Training Program at The Natural Gourmet Institute for Health and Culinary Arts, we had an exam on galettes. We had practiced making apple galettes so many times, the thought of tasting another galette was nauseating. A year later, I am ready to enjoy galettes again! If you are not familiar with a galette. It is a rustic tart - ideal for those who don't love baking and are not enthralled by the idea of making a lattice pie crust or something more elaborate. Galettes are the perfect way to enjoy the overflow of gorgeous summer fruit. This recipe features a vegan crust that is made mostly of whole grain flour, making it a guilt-free dessert and even an acceptable breakfast.

A few weeks ago I was dining with two super inspiring vegheads, Ali of Inspiralized and Alyssa of Simply Quinoa at the vegcentric restaurant, ABCV. Spicy carrots with crunchy vegetables and creamy tahini all wrapped up in a lettuce cup is a simple way to continue resetting for summer.

My husband and I just returned from a week's trip to Montana where we explored Glacier National Park followed by more hiking, some archery, and relaxation at a ranch for a few days. It was glorious. After travel, my body always craves tons of crunchy greens and smoothies to get back on track. Although I try and eat as healthy as possible on vacation, I certainly make room for indulgences. To help reset this week, I am starting my mornings with fully loaded smoothies that are packed with antioxidants, immune boosters, and, of course, lots of greens.

I had the opportunity to meet Phoebe Lapine of Feed Me Phoebe a year ago at a wellness gathering and have been enamored ever since. Not only are we both native New Yorkers navigating the wellness world, we both have a firm belief in living a life of balance without tipping the scales of the extreme. Phoebe coined the term healthy hedonist, which is all about taking small steps to live your best life while also properly nourishing your body. I am so excited to share a recipe from Phoebe's memoir, The Wellness Project, which comes out this week!
